Happy Chef - Sussex Centre Haymarket, Sydney

Seafood Noodle Soup

-> Mmm. Best noodle soup of its kind (at least) in Sydney's Chinatown. Even Martin Yan likes it. I'm actually rather envious of the owner of this popular stall - he's making truckloads of money, I would imagine. According to my observations, they're making 2 - 3 bowl of noodles every minute non-stop during packed lunch hours on both weekdays and weekends. This goes on for hours. If a bowl of noodle costs $9.50, you do the math - count the profit.

The broth of this noodle soup is incredibly tasty - a little sweet with a delightful aroma of fish stock. This kind of excellent stock is rather hard to achieve, and different types of fish used to produce the stock can yield different aromas. Coupled with sumptuous wontons, prawns, squids, fish balls and other surimi-derived delights, this thing does not only satisfy one's hunger, but warms the soul, too. Best in town!

I loveeeeee noodle soup... everything soupy especially the lighter broth one.... Even everytime I made my Indomie kuah Kari Ayam, I added extra water just for the sake of slurping more soup.... nyum...

No no noooo Leonyyy...you really shouldn't add extra water to instant noodles! Here's why:

There's a difference between good 'light' broth and bad 'light' broth. Good 'light' broth has full aroma, body, and texture, but is easy on the seasonings (not too salty, not too thick, not too strong in flavor). Bad 'light' broth is both weak on the flavor AND the body, texture, and aroma.

Instant noodles seasoning packets are exactly measured to yield an exact volume of broth. That's why you shouldn't mess with the proportions. When you add too much water, you might think that it's good since it's 'light' and you can slurp more soup, but the fact is, it's BAD because YES, you tone down the seasoning flavors, but you also reduce the consistency, body, aroma, and texture, which is BAD. *shaking head*

Hahahaha.... Iya iya...gile, baca penjelasan elu, mantabh... but IMHO, Indomie tastenya is too strong, dan msg-nya brasa banget kalo kuahnya sesuai takaran. Makanya nambahin extra water Rik :D. Kalo dimakan gitu aja, keasinan. Udah ditambah water, malah jadi passss... hihihhihi...gue demen sih yg rasanya gak gitu asin, but I found out org-org pada umumnya lebih suka asin. Adek gue aja kalo bikin Indomie kuah, dia pake 2 bungkus, tapi bumbunya satu aja, keasinan dia bilang.

Eh iya, you can read my stories from Perth... cuma dikit2 sih, baru sampe hari ke-5. Malesh nulisnya huehehehe...
